Clever “tortillas” for tacos and enchiladas made with jicama so they are grain-free, low-carb, and vegan-friendly.

Jicama should be thoroughly washed in cool water with a vegetable brush to get rid of any dirt.

Jicama should be cut off at both ends, then all skin and tough flesh should be peeled away using a vegetable peeler.

Jicama should be cut in half crosswise, then each half should be cut into paper-thin slices with a sharp knife or the thinnest mandoline blade.

Use them right away as crisp tortillas, or keep them in the refrigerator for up to a week in a resealable plastic bag.

A hearty winter stew uses chourico, a Portuguese smoked sausage, plus plenty of vegetables.

In a large pot, combine the water, chourico, potatoes, cabbage, carrots, onion, canned vegetables, parsley, garlic powder, salt, and red pepper.

Over high heat, bring to a simmer.

Then, lower the heat to medium-low, and simmer the soup for another 40 minutes or so, or until the vegetables are fork-tender.

Stir in cornstarch dissolved in water to thicken soup if it is too thin.

Cauliflower is thickly-sliced into ‘steaks’ and topped with onions, mushrooms, and Havarti cheese for a vegetarian ‘steak’ dinner.

Trim cauliflower into three or four “steaks.” Using a sharp knife, remove the stem and leaves from each “steak”; save the florets that broke off during the steak-slicing process.

In a big skillet, warm up 1 tablespoon of olive oil over medium heat.

Cauliflower “steaks” should be browned for 3 to 4 minutes on each side in hot oil.

Add the florets and water to the skillet; cover it and steam for 10 to 15 minutes, or until the cauliflower is tender.

In a different skillet over medium heat, heat the remaining 1 tablespoon of olive oil.

Sauté the onion for 2 minutes, or until fragrant.

Add the mushrooms and continue to cook for 10 to 15 minutes, or until the mushrooms are soft.

Heat up the oven’s broiler while positioning the oven rack about 6 inches from the heat source.

This homemade Italian sausage sauce is excellent. It’s thick and chunky, savory, and spicy. Italian sausage, green onions, red wine, and red pepper flakes are the key ingredients. You can easily multiply amounts by three and top on anything! better the following day.

Over medium-high heat, warm up the olive oil in a big skillet.

Garlic should be sautéed in hot oil until browned.

Cook for 4 minutes while breaking up the sausage with a spoon.

When the sausage is evenly browned, about 10 minutes later, add the green onions.

Cook for 5 minutes after adding the basil, oregano, and mushrooms.

Add tomato paste, tomato sauce, and stewed tomatoes.

Red pepper flakes, sugar, and red wine should be added.

Add salt and pepper to taste.

Simmer for at least one hour on low heat.

In a 12-inch skillet, heat the oil until it shimmers.

Add beef or turkey and cook, stirring frequently, until the raw color disappears.

Add the tomatoes and simmer for five minutes to combine the flavors.

To taste, add salt and pepper.

Add cornmeal and stir continuously while cooking until the mixture thickens almost immediately.

Refrigerate and cool (or serve warm for dinner as tacos or taco salad)

This sheet pan-baked zucchini and carrot cake serves a large number of people. Fresh orange juice is poured over the cake right after baking to give it extra moisture.

Bay leaf should be taken out before a smooth immersion blender puree is achieved.

Tofu, olives, mushrooms, and capers are cooked in a creamy pesto sauce, and served over colorful rotini pasta!

Bring a large pot of lightly salted water to a boil.

Stir in spiral pasta and cook for 8 to 10 minutes or until al dente; drain.

Blend together milk 1/4 cup olive oil and pesto sauce mix in a medium bowl.

Heat 2 tablespoons olive oil in a medium skillet over medium heat.

Place tofu in the skillet; season with salt and pepper.

Cook and stir until evenly browned.

Remove from heat and drain on paper towels.

Place mushrooms into the skillet; cook about 5 minutes.

Stir in olives 2 tablespoons Parmesan cheese and capers.

Mix in tofu and pesto sauce.

Continue cooking until heated through about 5 minutes.

Serve tofu pesto sauce over spiral pasta.

Top with remaining Parmesan cheese and basil.
