These small spring chickens cook slowly and smoke nicely on a medium grill for beautiful browned skin and meat that has a spicy, tangy taste from a blood orange marinade.

Put the game hens in a big bowl and add the blood orange juice and olive oil.

Add some chopped and fresh rosemary sprigs.

Hens should be seasoned with salt and pepper and Asian chilli paste.

Seasonings and juice are mixed with the chicken to coat it.

Spread a small amount of the marinade under the skin after using your fingers to loosen the skin covering the breasts.

For 2 hours, marinate the breast sides down in the refrigerator.

Set the outdoor grill to medium heat, preferably with charcoal (one layer of coals).

Drain the chickens and throw away the marinade.
