Banana Blueberry Almond Flour Muffins (Gluten-Free)
Banana-blueberry almond flour muffins are a quick and simple gluten-free treat that use almond flour in place of wheat flour.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Place paper liners in 4 muffin tins.
In a small bowl, combine the almond meal, flax seed, chia seed, and baking soda.
In a different bowl, whisk the eggs, honey, and apple cider vinegar together.
Once the batter is barely combined, stir the almond meal mixture into the egg mixture.
Add blueberries after blending the banana into the batter.
Pour a small amount of batter into each muffin cup.
Bake for about 15 minutes in a preheated oven, or until lightly browned.
Muffins should cool for 30 minutes in a pan.
