Banana Coconut Flaxseed Muffins with Apple and Chia
Incredibly quick and easy to whip up for breakfast, these gluten-free banana coconut muffins feature flaxseed meal, apples, and chia seeds.
Set oven to 350 degrees Fahrenheit (175 degrees C).
A muffin pan should be butter-greased.
In a bowl, mix the flaxseed meal, sugar, chia seeds, baking powder, and cinnamon.
Add apples, eggs, and bananas; thoroughly combine the batter.
Add 6 tablespoons of coconut flakes in a bowl.
With batter, fill tin 3/4 full.
Top with the final 2 tablespoons of coconut flakes.
Bake in the preheated oven for about 30 minutes, or until the tops spring back when lightly touched.
