Broccoli Tots
These kid-friendly finger foods are made with broccoli rice instead of potatoes and are flavored with parsley, garlic, and Cheddar cheese.
Set oven to 400 degrees Fahrenheit (200 degrees C).
Use parchment paper to cover a baking sheet.
Half of the broccoli florets should be placed in a food processor and should be pulsed 20 times or until it resembles rice grains.
Continue with the rest of the broccoli florets.
Add one teaspoon of salt and half an inch of water to a large shallow saucepan.
up to a boil.
Rice with broccoli has the heat turned down to low.
For about 5 minutes, cover and simmer until fork-tender.
Drain and wait for ten minutes to cool.
Fill the center of a clean, absorbent dish towel with the broccoli rice.
Squeeze and twist the towel to wring out as much water as you can.
