Cacao Nib Pesto
Traditional fresh basil pesto is given an extra crunch and a light smokiness by the addition of cacao nibs.
Basil leaves should be put in a small processor.
Add two tablespoons of oil, two tablespoons of pine nuts, two tablespoons of lemon juice, peppercorns, and sea salt.
until coarse, pulse.
Make a creamy paste by blending in additional oil as necessary.
Incorporate the remaining pine nuts.
Use pesto right away or store in the fridge in a glass container with oil on top to prevent browning.
