Baked Carrot Pudding
Cooked mashed carrots are combined with eggs, sugar, flour and baking powder and baked in this unique dessert.

Set oven to 350 degrees Fahrenheit (175 degrees C).

Carrots should be steamed or boiled until soft.

Beat eggs into carrots one at a time with a hand mixer or in an electric mixer with a whisk attachment.

Add sugar, vanilla, and baking powder by beating.

Stir in the flour.

Put the mixture in a 2 quart baking dish.

30 minutes of baking in a preheated oven or until puffed and set

Easy Cheesecake-Filled Cupcakes (Vegan)
These cheesecake-filled chocolate cupcakes are made with completely vegan ingredients, for a new twist on a sweet treat.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

Put paper liners in each of the 18 muffin tins.

In a bowl, combine the flour, sugar, cocoa, baking soda, and salt for the cupcakes.

Be careful not to overmix as you add the water, oil, vinegar, and vanilla and beat until combined.

In a different bowl, combine the sugar for the filling and vegan cream cheese and beat until smooth.

Beat in the vegan yogurt, cornstarch, vanilla, and salt after adding them.

Add chocolate chips and fold.

Add chocolate batter to each prepared muffin cup until it is 2/3 full.

On top of the chocolate batter, place a heaping tablespoon of the cream cheese mixture.

Top with the remaining sugar.

Place fresh mozzarella slices, basil leaves, and tomato slices on top of the melted cheese, leaving space for a crust to form; cook for two to three minutes, or until the top is bubbling and the edges are browned.

The Captain’s Famous Jambalaya
This jambalaya may have been a few places since the bayou, but it’s a thick, rich dish that everyone will love! I’ve experimented with many types of seafood in this recipe, and the flavor and consistency of snapper works the best. Serve with French bread and hot red pepper sauce!

Melt butter in a sizable saucepan over medium heat.

A thick paste-like roux will form after mixing in the flour and whisking continuously for 2 to 3 minutes.

Add green bell pepper, green onions, garlic, and file powder to the roux.

About 10 minutes of stirring and cooking should result in tenderness.

Add tomatoes to the mixture and stir.

Black pepper, cayenne pepper, allspice, cloves, salt, and bay leaf are used to season the mixture.

Cook for 10 to 15 minutes, stirring occasionally, until the mixture is thoroughly combined.

Add the mushroom broth, then stir in the rice.

If necessary, increase the broth’s volume to completely cover the ingredients.

Snapper is added after bringing to a boil.

until the rice is tender, cover, reduce heat, and simmer for one hour.

This buttermilk scone is tasty either plain or with grated cheese or chopped fruit. It is tender and flaky.

Preheat the oven to 425 degrees F (220 degrees C).

Lightly grease a baking sheet.

Sift together flour baking powder and salt in a large mixing bowl.

Add buttermilk and melted butter; stir until a soft dough is formed.

Turn dough out onto a lightly floured surface and press into a rectangle about 3/4-inch thick and 4-inches wide.

Cut into 8 equal pieces and place on the prepared baking sheet.

Bake in the preheated oven until golden brown 10 to 15 minutes.

Potato Pizza
Potato pizza like the ones served at one of my favorite restaurants a few years ago. Mashed potatoes and cheese are flecked with green onion and bacon bits, then spread over a pre-made crust to make 2 delightful pizzas.

Preheat the oven to 425 degrees F (200 degrees C).

Prepare instant mashed potatoes according to package directions.

Stir in half of the Cheddar cheese bacon bits and green onions.

Cut the pizza crust dough in half and spread into the bottom of two 8-inch round pans.

Bake for 4 minutes in the preheated oven until about halfway done.

Spoon the potato mixture over each crust.

Sprinkle remaining Cheddar cheese over the top.

Bake for an additional 5 minutes in the preheated oven until crust is golden and cheese is melted.

Let cool for 5 minutes before slicing and serving.

Top with sour cream to taste.

When served around our house, this simple dessert disappears very quickly and requires no baking! A perennial favorite! Enjoy!!

Crush some cookies, reserving a few for decoration, and press them into the bottom of a 9×13 inch pan.

Beat the cream cheese and confectioners’ sugar together in a medium bowl.

After thoroughly blending in the peanut butter, fold in the whipped topping.

Spread the remaining cookie chunks over the crushed cookie base, sprinkle them on top, and then freeze for one to two hours.

Before cutting and serving, thaw for 10 to 15 minutes.

This simple breakfast dish can be prepared ahead of time and contains ham, green onions, and hash browns baked with hot pepper jack cheese.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

Apply cooking spray to a 2-quart casserole dish.

Put hash brown potatoes in the bottom of the dish as evenly as possible.

Sprinkle with pepper jack cheese, ham, and green onions in that order.

In a medium bowl, combine salt, pepper, and evaporated milk.

Overlay the layers in the dish with the egg mixture.

Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted in the center comes out clean.

Pork chops baked with potatoes in a creamy mushroom and onion sauce.

Preheat oven to 350 degrees F (175 degrees C).

Butter a 2 quart baking dish.

Rub pork chops with salt pepper and garlic powder.

Melt butter in a skillet over medium-high heat add chops and brown on both sides.

Remove from skillet.

Place onions in skillet and cook until browned.

Pour in mushroom soup and milk; stir until blended.

Remove from heat and set aside.

Arrange sliced potatoes evenly in prepared baking dish.

Arrange chops on top of potatoes.

Pour soup mixture over chops.
