Set the oven to 350 degrees Fahrenheit (175 degrees C).

Cooking spray a 9-inch springform pan, line the bottom with a circle of parchment paper, and cover the outside with thick aluminum foil.

For the crust, mix together in a bowl the graham cracker crumbs, pecans, sugar, cinnamon, and salt.

Melted butter should be incorporated until the mixture resembles sand.

Using a measuring cup with a flat bottom or your fingers, press the crumb mixture evenly into the bottom and up the sides of the prepared pan.

Marinate chicken in yogurt and spices before adding it to the greatest gingery, garlicky, oniony butter sauce made in an Instant Pot.

Mix yogurt ginger-garlic paste lemon juice salt red chile turmeric cumin and garam masala together in a container.

Mix in chicken until coated.

Marinate in the refrigerator for 1 hour.

Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function.

Heat oil and add onion green chiles garlic and ginger.

Saute until fragrant about 1 minute.

Add tomato.

Stir cardamom red chile cumin coriander and turmeric in one at a time.

Saute until onion is soft and well coated in spices 2 to 3 minutes.

Add cashews.

Turn off pressure cooker if pot gets too hot.

Let mixture cool.

Grind onion mixture in a blender pouring half-and-half in gradually until a smooth paste is achieved.

Sausage and cheese tortellini are served with a creamy sauce flavored with tomatoes, spinach, and mushrooms.

Heat a nonstick skillet over medium-high heat.

Cook and stir sausage in the hot skillet until browned about 10 minutes.

Heat olive oil in a large pot over medium-high heat.

Add onion and garlic; saute until the onion is translucent about 5 minutes.

Reduce heat; add tomatoes spinach mushrooms basil salt and pepper.

Bring to a simmer stirring as needed.

Combine cream milk cheese and flour in a bowl.

Add to the tomato mixture and return to a simmer.

Stir occasionally until reduced about 15 minutes.

While the sauce is reducing bring a large pot of water to a boil.

Add tortellini and boil gently until tender about 6 minutes.

Drain the tortellini.

Mix with the tomato sauce and serve.

Pear Salad I
A wonderful blend of mixed greens, pears, toasted walnuts and Gorgonzola (blue cheese) with a light tasty dressing.

Preheat the oven’s broiler.

Arrange pear slices in a single layer on a baking sheet.

Broil until nicely browned 3 to 5 minutes.

Set aside to cool.

Pour port wine into a saucepan.

Bring to a boil and cook until the wine is reduced by 1/2.

Remove from the heat and cool.

Pour the cooled wine into a blender or food processor and add the shallots garlic mustard and vinegar.

Puree until smooth.

Divide the salad greens evenly between four serving plates.

Arrange some of the broiled pear slices over each pile of greens.

Sprinkle with Gorgonzola cheese.

Drizzle dressing over each plate then sprinkle with walnuts.

If you like this can also be made in one large bowl instead of individual servings.

In a saucepan, bring 6 cups of water to a boil.

Edamame should be cooked for 4 to 5 minutes, until soft.

Drain and chill for ten minutes.

Cashews and 1/8 teaspoon salt should be combined in the food processor’s bowl.

Blend in a few pulses, scraping down the sides frequently, until the mixture resembles firm dough.

Edamame that has been cooked, garlic scapes, coriander, pepper, lemon juice, lemon zest, and 2 teaspoons of salt should all be added and pulsed to the desired consistency.

Olive oil should be slowly added while the processor is running to achieve smooth hummus.

Season to taste with additional olive oil, salt, and pepper.

Using a tortilla press a rolling pin or your hands press each ball of dough flat between two sheets of plastic wrap.
