These muffins are much better than plain blueberry muffins because they are moist, sweet, and packed with berries. My two kids love them so much that they frequently bring me fresh fruit to make these muffins. Although whole wheat flour and wheat germ are used to make the muffins, the kids don’t seem to notice.

Preheat oven to 400 degrees F (200 degrees C).

Butter muffin pan.

In a large mixing bowl whisk together flours wheat germ sugar baking powder salt and cinnamon.

In another bowl whisk together half and half cream and eggs.

Stir wet ingredients into dry mixing just to combine.

Fold in berries.

Scoop batter into muffin pan cups.

If there are any empty cups fill those halfway with water.

Bake in preheated oven for 20 minutes or until done.

Shake off the excess marinade before removing the shrimp.

Put shrimp on the skewers by threading them through once near the head and once near the tail.

Place the shrimp on the skewers and cook over a preheated grill for 6 to 8 minutes, or until the shrimp are no longer transparent in the center.

This recipe makes chiles rellenos, the traditional Mexican dish of fried peppers stuffed with cheese. To simplify dinner preparation, stuff the peppers in advance and freeze. The next day, remove from the freezer and fry.

Preheat the oven’s broiler and set the oven rack at about 6 inches from the heat source.

Line a baking sheet with aluminum foil and place the peppers onto the prepared baking sheet.

Cook under the preheated broiler until the skin of the peppers has blackened and blistered 8 to 10 minutes per side.

When the peppers are about 80 percent blackened place them a plastic bag seal and allow the peppers to steam as they cool about 20 minutes.

Once cool remove the skins and discard.

Cut a slit lengthwise into the side of each pepper and remove seeds and veins.

To reduce spiciness rinse out any remaining seeds with water.

Pat the peppers dry with paper towels.
