Cherry Jalapeno Mexican Pork
To create a sweet, zesty sauce with a little kick at the end, tender chunks of boneless pork simmer with fresh cherries, jalapeno pepper, honey, and Mexican-style spices.
The onion, green bell pepper, green onions, jalapeno pepper, and garlic should be cooked and stirred in the olive oil for about 10 minutes, or until softened.
Pork cherries, cilantro, lime juice, chili powder, cumin, and onion powder should all be thoroughly mixed in.
Boil the mixture, cover it, lower the heat to a simmer, and cook for about 30 minutes, or until the pork is cooked through and no longer pink and the vegetables and cherries have released their juices.
Take off the lid, add the honey, stir it in, and season with salt and pepper to taste.
For another 30 minutes, simmer uncovered, until the sauce is reduced and the pork is tender.
There won’t be a lot of sauce.
