Coconut Milk Pancake
Swap coconut milk in for regular milk in this recipe for fluffy pancakes for a creamy and rich version of the classic breakfast treat.
In a bowl, combine salt, baking soda, baking powder, and flour.
In a separate bowl, combine the coconut milk, egg, butter, and vanilla extract; stir into the flour mixture just until the batter is combined.
An oiled griddle is heated to medium-high heat.
Large spoonfuls of batter should be dropped onto the griddle and cooked for 3 to 4 minutes, or until bubbles form and the edges are dry.
1 to 2 minutes after flipping, cook the other side until browned.
