Curried Potato and Chickpea Soup
This simple vegan curried soup is flavored with a blend of spices and contains sweet potatoes, white potatoes, and chickpeas.
Onions are cooked in oil that has been heated over medium-low heat.
Cook and stir the onions for about 5 minutes, or until they are soft and translucent.
To prevent anything from sticking to the bottom, add water as needed and stir in the curry powder, cumin, turmeric, and coriander.
Add chickpeas, white potatoes, sweet potatoes, and vegetable broth.
Bring to a boil, then lower the heat and simmer for about 20 minutes, or until the potatoes are tender enough to puree.
Using an immersion blender, puree the soup to the desired consistency.
Add salt and pepper to taste.
