Easy Mediterranean Orzo Salad
With a simple lemon dressing, this orzo salad combines a number of Mediterranean flavors, including olives, chickpeas, pine nuts, and bell peppers.
Large pot of lightly salted water should be brought to a boil.
Orzo should be cooked for about 11 minutes in boiling water, stirring occasionally, until it is soft to the bite but still firm.
Good drainage Add olive oil with lemon flavoring to the orzo.
Insert olives Ricotta salata, artichoke hearts, chickpeas, roasted red peppers, and pine nuts.
Combine by tossing.
Refrigerate to cool and develop flavors.
