Easy Pasta Fagioli
Italian comfort food at its finest for the winter months is this simple recipe for pasta fagioli soup with cannellini beans, ditalini pasta, tomato sauce, and herbs.
Over medium heat, warm up the olive oil in a saucepan.
When the vegetables are soft, add the carrot, celery, and onion.
Add the garlic and briefly sauté.
Twenty minutes later, add the tomato sauce, chicken broth, parsley, basil, and pepper.
Large pot of lightly salted water should be brought to a boil.
Drain the ditalini pasta after cooking for 8 minutes, or until it is al dente.
Add beans and cooked pasta to the soup; heat through for one or two minutes.
