Elderberry Pie II
This pie is pure elderberry with sugar, a hint of lemon juice, and cornstarch stirred in. The top crust is latticed so when you take it from the oven, you can see the beautiful berries and bubbly sauce glisten through it.

Set oven to 375 degrees Fahrenheit (190 degrees C).

The cornstarch and water mixture is added to the sugar and berries.

Cook while constantly stirring until desired thickness is reached.

If it isn’t thick enough, add more cornstarch.

lemon juice is added.

Fill bottom crust with liquid.

Add a butter dabs.

Add a crust to the top or a lattice.

For about 40 minutes, bake at 375 degrees F (190 degrees C) until the crust is golden and the berries are bubbling through the crust holes.

Note: To prevent the pie from bubbling over while baking, place a pan or foil under it.
