Fresh Berry Coffeecake
You can use either fresh raspberries or fresh blackberries for this tender and delicious coffee cake. I prefer to toast my pecans in the oven for 3 to 5 minutes to really bring out their flavor.
Set oven to 350 degrees Fahrenheit (175 degrees C).
A 10 inch Bundt cake pan should be sprayed with nonstick cooking spray.
Brown sugar and raspberries should be combined, then set aside.
Mix the flour, sugar, baking powder, baking soda, and salt in a separate bowl; place aside.
Cream the butter, sour cream, and two teaspoons of vanilla in a third bowl.
One at a time, beat in the eggs.
Add flour mixture and stir just until moist.
Pour half of the batter into the pan and top with 1/2 cup of berries and 1 cup of pecans.
Add the last cup of pecans and the last of the berries.
Over the berries, distribute the remaining batter.
