Try this quick and easy ramen dish with ginger and scallions that can be served as a side or a main.

In a small bowl, combine the soy sauce, chicken broth, rice vinegar, cornstarch, ginger, and garlic; set aside.

Water that has been lightly salted is brought to a boil.

Ramen noodles should be cooked in boiling water for about 3 minutes, stirring occasionally, until tender.

Reserve 1 cup of cooking water before draining.

In a sizable skillet or wok, warm the sesame oil over medium heat.

In a hot skillet, quickly stir-fry the carrots and scallions until they are soft, about a minute.

Turn down the heat to medium-low, add the sauce, and cook for about two minutes, or until the sauce begins to thicken.

Ramen noodles that have been drained are added after being separated and coated with tongs.

When you’ve reached the consistency you want, gradually add some of the reserved cooking water.
