Hungarian Potato and Sausage Soup
Every nourishing spoonful of Chef John’s hearty Hungarian potato and sausage soup delivers a blend of savory and sweet flavors.
In a soup pot set over medium heat, melt the butter.
Sausage is added, and it is cooked and stirred for three minutes, barely browning.
Butter should be left in the pot after the sausage has been transferred to a bowl using a slotted spoon.
Add onion and one teaspoon of salt to the pot.
Cook and stir the onion for 4 to 5 minutes, or until it just begins to turn translucent and takes on the color of the browned meat juices in the pan.
Add flour and stir-fry for two to three minutes.
Be careful not to burn the paprika as you cook and stir the garlic and paprika for about a minute until fragrant.
