Whisking the egg whites to a stiff peak before blending with the cream cheese makes this cheesecake light and fluffy. And with just a half cup of sugar, this not-too-sweet dessert will go perfectly with your favorite fruit topping.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

An 8-inch springform pan’s exterior should be covered in aluminium foil, and the interior should be sprayed with cooking spray.

Press firmly to ensure that the vanilla wafer crumbs are evenly distributed over the bottom and sides of the pan.

In a big bowl, combine the sugar and egg yolks.

Add the cream cheese, sour cream, and vanilla extract, and stir until well combined.

In a large mixing bowl made of glass or metal, whisk egg whites until foamy.

As you continue to beat, add the cream of tartar and create stiff peaks.

The egg whites should form a sharp peak when you lift your beater or whisk straight up.
