Maple Cannellini Bean Salad with Baby Broccoli and Butternut Squash
This is a cannellini bean salad with squash, broccoli, bacon, and maple syrup. Serve warm or at room temperature.

Cannellini beans are heated in a saucepan over low heat.

Over medium heat, warm 1 tablespoon of olive oil in a skillet.

Add the red onion and stir while cooking for about 5 minutes, or until the onion has softened and become translucent.

Add 1 tablespoon of maple syrup, lower the heat to medium-low, and continue to cook and stir the onion for an additional 15 minutes, or until it is very soft and dark brown.

eject from skillet and incorporate into beans.

Over medium heat, add 1 more tablespoon of olive oil to the skillet.

Cook and stir the butternut squash for about 8 minutes, or until it is tender.

For about five minutes, cook and stir to coat after adding 1 tablespoon maple syrup.

Take out of skillet and incorporate squash into bean mixture.
