This yeasted bread ring, called rosca de reyes or pan rosca in Mexico, is similar to king cake. It’s a rewarding treat to make at home to celebrate Epiphany.

Prepare bread: Mix flour eggs egg yolks sugar water dry yeast orange zest lime zest and salt in the bowl of an electric mixer fitted with a dough hook.

Add 1/2 cup plus 1 tablespoon butter; mix until dough is elastic and shiny about 5 minutes.

Form dough into a ball.

Cover and let rise in a warm place for 45 minutes.

Punch down dough gently; roll into a long cylinder.

Join the ends of the cylinder together in the shape of an oval ring.

Place ring on a greased baking sheet; cover and let rise in a warm place for 45 minutes.

Preheat the oven to 400 degrees F (200 degrees C).

Serve with tortilla chips, and store any leftovers in the fridge.

This pie is pure elderberry with sugar, a hint of lemon juice, and cornstarch stirred in. The top crust is latticed so when you take it from the oven, you can see the beautiful berries and bubbly sauce glisten through it.

Set oven to 375 degrees Fahrenheit (190 degrees C).

The cornstarch and water mixture is added to the sugar and berries.

Cook while constantly stirring until desired thickness is reached.

If it isn’t thick enough, add more cornstarch.

Add a crust to the top or a lattice.

For about 40 minutes, bake at 375 degrees F (190 degrees C) until the crust is golden and the berries are bubbling through the crust holes.

Thanks to the generous amount of fresh lemon juice and zest used in the custard base, this lemon ice cream is simple to make, incredibly creamy, and quite tasty.

Combine heavy cream sugar half-and-half and lemon zest in a saucepan; bring to a simmer over low heat.

Cook and stir until sugar is dissolved about 5 minutes.

Remove from heat cover the saucepan and allow to steep for 10 minutes.

Uncover the saucepan and bring back to a simmer over low heat.

Beat egg yolks in a medium bowl.

Gradually whisk 1 cup hot cream mixture into eggs several tablespoons at a time.

(This brings eggs up to temperature without scrambling them.) Stir egg mixture back into cream mixture in the saucepan.

Cook and stir over low heat until mixture coats the back of a spoon 5 to 10 minutes.

Transfer to a large bowl; cover and refrigerate 8 hours to overnight.

Pour 2 tablespoons avocado oil over top and sprinkle with salt and pepper.

Stir until coated with oil and seasoning then spread in a single layer on a sheet pan.

Place chicken into the same bowl drizzle with remaining 1 tablespoon oil and season with salt and pepper.

Toss to coat and nestle chicken pieces on the sheet pan between the pineapple and vegetable pieces.

Bake in the preheated oven until vegetables are tender and chicken is cooked through about 25 minutes.
