Persimmon, Pomegranate, and Massaged Kale Salad
This is a colorful salad of kale and persimmon tossed in a zesty citrus dressing and topped with maple-roasted macademia nuts and pomegranate seeds.
Set oven to 375 degrees Fahrenheit (190 degrees C).
Use parchment paper to cover a baking sheet.
Spread macademia nuts on a baking sheet after tossing with 1 tablespoon maple syrup and a dash of salt.
In a preheated oven, toast macademia nuts for about 5 minutes, or until they are lightly golden.
Remove from oven, then drizzle 1 tablespoon of maple syrup on top.
To make the dressing, combine the orange juice, lemon juice, 1 tablespoon of maple syrup, and ground black pepper in a small bowl.
insert the kale pieces In a large bowl, combine 1 tablespoon olive oil and 1/2 teaspoon salt.
Massage the kale for 3 to 5 minutes, until it is tender.
Slices of persimmon should be added along with the dressing.
Add pomegranate seeds and roasted macadamia nuts on top.
