Pork and Chicken Adobo

Pork and Chicken Adobo
This recipe was adapted from one served at a well-known Filipino eatery in Manila. It gets better the longer it marinates in the fridge!

Put the chicken and pork in the stockpot.

Garlic cloves and a torn bay leaf are rubbed on, followed by a light pepper seasoning and a vinegar and soy sauce coating.

Refrigerate covered for at least two hours or overnight.

Using a cast iron casserole or Dutch oven, bring the meat and marinating liquid to a boil.

Cook for about 30 minutes at a simmer before reducing heat.

In order to keep the sauce from drying out, add water if necessary.
