Pumpkin Pecan Biscotti
The cinnamon, ginger, and nutmeg-flavored pumpkin biscotti with pecans are perfect for dipping in coffee or hot cider. They also make wonderful little presents.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Use parchment paper to cover a baking sheet.
In a big bowl, stir the flour, white sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.
Beat the eggs with the pumpkin puree, vanilla extract, and pecans in a separate bowl.
The dry ingredients should be added and mixed until a stiff dough forms.
Each half of the dough should be formed into a log that is 10 inches long and 2 inches wide.
Place the logs on the baking sheet covered with parchment paper.
Bake for 25 to 30 minutes in a preheated oven, or until lightly browned.
