Pumpkin Raisin Cookies
A wonderful cakelike pumpkin cookie that fills your kitchen with a heavenly smell and uses up leftover pumpkin.

Set oven to 350 degrees Fahrenheit (175 degrees C).

Grease baking trays.

Shortening and sugar are whipped together in a medium bowl until smooth.

Mix until fluffy after adding the egg and vanilla.

Add the pumpkin and stir.

Combine the flour, baking soda, salt, cinnamon, and pumpkin pie spice in a sieve; add to the pumpkin mixture.

Add the raisins and walnuts last.

Drop heaping spoonfuls of cookie dough onto the prepared baking sheets.

Cookies should be lightly browned around the edges after baking for 10 to 12 minutes in a preheated oven.

Apply the spice glaze, then move the baked goods to cooling racks.
