Quinoa with Butternut Squash, Chicken, and Goat Cheese
Butternut squash, chicken, and goat cheese are combined with quinoa to create a filling, colorful, and nutritious one-dish meal.
Chicken breasts should be put in a pan with water and brought to a boil.
Reduce heat to medium-low and simmer for 5 to 8 minutes, or until the middle of the chicken breasts is no longer pink.
Chicken breasts should be removed and left to cool while the water is saved.
Take 3 cups of the reserved water, discarding the rest.
Refill the saucepan with the 3 cups of water.
Back to a boil after adding quinoa and stock.
Reduce heat to medium-low, cover the pot, and simmer for 15 to 20 minutes, or until the quinoa is tender.
