Raspberry Banana Bread
Raspberries give this sweet and moist banana bread an extra kick. Serve it as a sweet treat at brunch or as a snack with coffee.
Set oven to 325 degrees Fahrenheit (165 degrees C).
Butter a loaf pan.
With a fork, mash raspberries that have been defrosted; strain raspberries to get rid of seeds.
With a fork, mash the banana in another bowl.
In a bowl, combine the flour, cinnamon, baking soda, salt, and nutmeg.
In a bowl, use an electric mixer on low speed to blend the sugar, eggs, raspberries, banana, and vegetable oil for two to three minutes.
When batter is barely moistened, stir in lemon extract after stirring the flour mixture into the raspberry mixture.
Fill the prepared loaf pan with batter.
