Roasted Carrots with Garlic Bread Crumbs
A vibrant, delectable side for any meat or poultry dish, carrots are roasted in orange juice, coriander, and garlic bread crumbs.

Set the oven to 450 degrees Fahrenheit (230 degrees C).

Slice carrots into long, 3/8-inch-thick slices on a sharp bias.

In a 9×13-inch baking dish, arrange.

Toss to coat with orange juice, water, coriander, salt, and pepper.

Roast for 30 to 35 minutes, turning the vegetables halfway through, and dousing with 1 tablespoon melted butter (and adding additional water if juices begin to scorch).

In the meantime, combine the remaining 1 tablespoon of melted butter, orange zest, and garlic in a small bowl with the bread crumbs.

Sprinkle over carrots and roast for an additional 5 minutes, or until panko is lightly browned.

Add chopped parsley leaves as a garnish.
