Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad
You can prepare tonight’s dinner and tomorrow’s lunch using Southwestern-Flavored Ground Beef. Simply reserve and store some of the taco meat, lettuce, shredded cheese, scallions, and tomatoes in the refrigerator. Such a gorgeous salad will entice potential lunch customers. Most likely, they won’t have any luck.

In a 12-inch skillet, heat the oil until it shimmers.

Add the onion and cook for 5 minutes, or until soft.

Add the cumin, garlic, chili powder, oregano, and saute for about a minute, or until fragrant.

Add beef or turkey and cook, stirring frequently, until the raw color disappears.

Add the tomatoes and simmer for five minutes to combine the flavors.

To taste, add salt and pepper.

Add cornmeal and stir continuously while cooking until the mixture thickens almost immediately.

Refrigerate and cool (or serve warm for dinner as tacos or taco salad)
