Spicy Cold Soba Noodles
Cold soba noodles are simple to prepare and taste great when served as a side dish. However, when you add a protein, the dish becomes a full meal.
Using a small saucepan over medium-high heat, bring soy sauce to a boil.
Simmer for 10 to 15 minutes, then lower the heat to medium-low.
Add molasses to the soy sauce after removing it from the heat.
In a medium mixing bowl, combine sesame oil, tahini, balsamic vinegar, and chilli oil.
Stir in the soy sauce mixture gradually.
Add half of the scallions and stir.
Large pot of lightly salted water should be brought to a boil.
Add the soba noodles, and cook for about 3 minutes, stirring occasionally, until they are soft to the bite but still firm.
Drain right away, then thoroughly rinse with cold water.
Combine the sauce and noodles.
Place in the refrigerator for at least 30 minutes to chill, then top with the remaining scallions and sesame seeds.
