Spicy Peanut Chicken Stir-Fry
Cayenne pepper has been added to the sauce to make the peanut chicken stir-fry a little spicier. Over rice, please!
In a bowl, combine the cayenne pepper, chicken broth, soy sauce, cornstarch, sugar, and vinegar.
Stir until the sauce is smooth.
Chicken and garlic are sauteed in oil in a wok or a sizable skillet over medium-high heat for 5 to 10 minutes, or until the chicken is no longer pink in the center.
Add the red bell pepper and cook for about a minute, or until just barely tender.
Sauce should thicken in about a minute after being stirred into the chicken mixture.
Add peanuts and green onions to the chicken mixture as a garnish.
