Sriracha Roasted Chicken
These roasted chicken thighs benefit greatly from the addition of Sriracha to the marinade, which is also made up of mirin, soy sauce, butter, and lime juice.
Stir together in a bowl the Sriracha chili sauce, soy sauce, mirin, lime juice, butter, brown sugar, and ginger.
Place chicken thighs in a sizable plastic bag that can be sealed.
Fill the bag with the chile sauce mixture.
Excess air should be squeezed out of the bag before sealing; marinate for up to a day.
Set oven to 425 degrees Fahrenheit (220 degrees C).
Spray some cooking oil on a baking sheet.
Remove chicken thighs from marinade, shake off extra moisture, and arrange on baking sheet that has been prepared.
Bring marinade to a boil in a small saucepan after pouring it in.
For 10 minutes, simmer marinade on medium-low heat.
