Tomatillo Soup

Tomatillo Soup
This is a Mexican-style chicken soup with tomatillos and chicken breast meat cooked in a stock seasoned with fresh jalapenos, garlic and cayenne pepper. Serve with a dollop of sour cream and sprig of cilantro.

In a big pot or Dutch oven, heat oil on high heat.

Cook the chicken in oil for two minutes on each side, or until both sides are browned.

Remove and reserve the chicken.

Sauté the onions and garlic in the saucepan until golden.

Add the broth, tomatillos, and jalapeno peppers by stirring.

up to a boil.

For about 15 minutes, reduce heat, cover the pot, and simmer.

Utilize a food processor or blender to batch-purée vegetables.

Refill the pot with hot water.

Taste the soup at this point; if it needs more heat, add cayenne pepper or pepper sauce.

Shred the chicken after thinly slicing it.

Blend into soup.

Use salt and pepper to taste to season.
