Traditional Chinese Scallion Pancakes
For a quick and tasty savory snack or side, make traditional Chinese scallion pancakes at home with ingredients you probably already have in your pantry!
In a bowl, mix yeast, sugar, and warm water.
Mix the dough with a spatula after adding 1 cup of flour.
In a different bowl, combine the remaining 1 cup flour, 1 cup hot water, 2 tablespoons oil, and salt until the mixture resembles dough.
Add the dough from step 1 and combine, forming a ball and adding flour as necessary.
Place the dough ball on a lightly dusted work surface and let it sit for 30 to 40 minutes with a warm, damp towel over it.
Slice the dough ball in half.
Sprinkle half the scallions on each after rolling them out.
Each piece should be rolled into a tube and then cut in half.
Roll into large pancakes and flatten, if necessary dusting with flour.
