Vegan Chickpeas with Kale and Cilantro-Lime
This flavorful vegan appetizer is quick and simple to make and features chickpeas that are sauteed with kale, cilantro, and lime.
Fill a saucepan with water until it is just below the bottom of the steamer insert.
Water is brought to a boil.
Add the kale, cover, and steam for 3 minutes or until it is tender.
Drain after giving kale a cold water rinse.
In a bowl, combine chickpeas and fava beans.
Onion and jalapeno pepper should be cooked and stirred in olive oil over medium heat for about 5 minutes, or until soft.
To the onion mixture, add the chickpea mixture, kale, cilantro, and curry powder; stir-fry for 2 to 3 minutes, or until heated through.
Pour half of a lime over the chickpea mixture.
Pour mixture onto 4 plates for serving.
Squeeze remaining lime half over each serving and sprinkle with salt after cutting it into four wedges.
