Vegan Mapo Tofu
Ready in minutes, this vegan mapo tofu relies on a show-stopping sauce of fermented black beans, chili bean paste, and Sichuan peppercorns.

In a bowl, combine cornstarch, vegetable broth, maple syrup, and soy sauce.

In a wok, heat peanut oil to a medium-high temperature.

Include the following: Sichuan peppercorns, green onions, mushrooms, black beans, and onions.

about 1 minute of sauteing until aromatic.

Add the soy sauce mixture and the chili bean paste.

3 to 5 minutes of stirring and cooking until thick.

Add the tofu and cook for an additional minute or so, until heated through.

Place the cooked tofu in a serving dish and top with sesame and chile oils.

Add chopped peanuts on top.
