This vegetarian breakfast casserole has a crispy crust of hash browns under a delicious mixture of eggs, vegetarian sausage, cheese, and vegetables.

Set the oven to 400 degrees Fahrenheit (200 degrees C).

Cooking spray should be used to grease a 9 1/2-inch square baking dish.

In the dish that has been prepared, press hash browns into the bottom and up the sides.

Add salt and pepper and spray with cooking spray.

Bake for 35 to 45 minutes, or until the top is crisp and lightly browned throughout.

Be aware that the top edges will quickly turn dark and brown; if this happens, you can trim them off.
