Zucchini Bread in a Jar
This unique recipe for zucchini walnut bread is easy to bake in Mason jars that seal as they cool so you can save on freezer space.

Set oven to 325 degrees Fahrenheit (165 degrees C).

With 1 tablespoon shortening, grease pint jars.

For about 10 minutes, soak raisins in hot water to make them plump.

Drain.

In a large bowl, combine the eggs, sugar, and 1 cup shortening; beat with an electric mixer until creamy.

Mix in the raisins.

Mix in the flour, cinnamon, baking soda, salt, and baking powder.

Add vanilla extract and walnuts made from zucchini to the batter.

Pour batter into each greased jar until it is 2/3 full.

Place the jars on a baking sheet with a rim.
