Zucchini Bread with Cinnamon Sugar Topping
Golden raisins add flavor and texture to zucchini bread, and a sweet glaze of cinnamon and brown sugar adds sweetness. Two loaves result from this recipe.
Set oven to 325 degrees Fahrenheit (165 degrees C).
Spray cooking oil in two loaf pans.
In a big bowl, combine the zucchini, sugar, vanilla extract, vegetable oil, and raisins.
Combine the flour, baking soda, baking powder, salt, and 1 teaspoon of cinnamon in a separate bowl.
When almost all the lumps are gone, stir the flour mixture into the zucchini mixture.
The batter should be divided between the two loaf pans.
