Air-Fried Greek Yogurt Frittata
This quick and simple air-fried frittata made with flavorful vegetables and spinach benefits from the lovely texture and tanginess of Greek yogurt.

350 degrees Fahrenheit should be reached in an air fryer with a nonstick 6-inch round cake pan (175 degrees C).

When the air fryer reaches temperature, remove the cake pan using an oven mitt.

Oil should be added to the pan before onion, carrot, celery, and parsley are added.

Return the pan to the air fryer and cook for 5 minutes, or until the onion is translucent and soft.

While this is happening, roughly chop half of the spinach and add it to a bowl with the eggs, Greek yogurt, and black pepper; whisk to combine.

Place the cooked vegetables in the cake pan after pouring the egg mixture there.

Keep the remaining uncut spinach leaves aside.
