Asparagus, Snow Pea, and Radish Salad
This classy salad showcases delicate springtime vegetables simply dressed in a zesty lime vinaigrette for the season.
Put water in a saucepan and bring to a boil.
Boil for one minute while adding asparagus.
Add snow peas and continue to boil asparagus for one minute.
Drain and pat dry.
Add snow peas and asparagus to a big bowl.
Add the radishes, scallions, and dill, and gently toss the salad to combine.
In a small bowl, combine the oil, sugar, salt, and pepper; pour over the salad and toss to combine.
For about an hour, leave at room temperature to let the flavors meld.
Pour lime juice over the salad and gently toss to combine.
