This is another one-meal-in-a-pot dish. It contains soup, meat, and vegetables all cooked together in one delicious broth. Terrific during cooler weather.
Put the beef ribs in a big pot and cover with water.
Over a high heat, bring to a boil, then boil for five minutes.
Drain and throw away the cooking water (the ribs will not be fully cooked).
Bring the beef back to the pot.
Add the beef bouillon, peppercorns, onions, and 1 quart of water.
Boiling, covering, lowering the heat, and simmering for one hour Floating fat should be skimmed off.
Add the potatoes, carrots, celery, and chayote, stir, then cover and simmer for about 20 minutes, or until the potatoes are tender.
Use salt to season.
Cook the cabbage for 5 minutes more after adding it.
