Garlic Lentils with Kale
Packed with fiber, this lentil and kale dish is a great low-fat side dish or one-pot vegetarian main meal.

Over medium heat, warm some olive oil in a pot.

Cook red onion in hot oil for 7 to 10 minutes, or until browned.

Onion and lentils should be combined in a pot, with water added to cover the lentils by 2 to 3 inches.

Heat the water until it boils, then turn the heat down to medium-low.

The lentil mixture should be thoroughly mixed with tomato paste, garlic, brown sugar, and paprika before being brought to a simmer and cooked for about an hour, or until the lentils are tender.

Add kale to the lentils, turn the heat down to low, and cook for 10 to 15 minutes, or until the kale is tender.

Season with salt and freshly ground black pepper.
