This paleo recipe for pulled pork slow-cooks pork shoulder with bell peppers, roasted Anaheim chiles, and a ton of Mexican spices.

Heat up the oven’s broiler while positioning the oven rack about 6 inches from the heat source.

Use aluminium foil to cover a baking sheet.

Cut anaheim peppers in half lengthwise; discard the stem, seeds, and ribs.

On the prepared baking sheet, arrange the peppers cut-side down.

Cook the peppers in the hot broiler for 5 to 8 minutes, or until they are blackened and blistered.

Wrap plastic wrap in a tight fitting layer and transfer to a bowl.

Allow peppers to steam for 20 minutes as they cool.

Chop flesh after removing and discarding skins.

Black pepper and salt are used to season pork.

In a sizable skillet set over medium-high heat, melt the bacon fat.

Cook the pork for three minutes on each side, until it is browned.
