Prime Rib Roast on Charcoal Grill
This garlic-and-rosemary-rubbed prime rib is charcoal grilled with wood chips for smokier results than your average baked roast.

Olive oil, rosemary, garlic, salt, and beef base should all be combined in a bowl.

The rub should completely encircle the beef roast.

On indirect heat, preheat a charcoal smoker to 350 degrees F (175 degrees C).

Place a drip pan under the roast and place it directly on the grill grate.

As directed by the manufacturer, add wood chips.

Smoke for approximately two hours and thirty minutes, or until an instant-read thermometer inserted into the center of the roast registers at least 125 degrees F (52 degrees C).
