Pumpkin Spice Creme Brulee
Make a gourmet Thanksgiving dessert with hints of fall flavors by placing individual jars of pumpkin spice creme brulee into a sous vide cooker.
In a big bowl, beat the egg yolks; add salt, sugar, and 1/3 cup.
In a pot over low heat, combine heavy cream, pumpkin pie spice, and vanilla extract.
Cook, occasionally stirring, until the liquid reaches 158 degrees F.
(70 degrees C) 2-4 minutes; avoid overheating.
Slowly add the hot cream mixture to the beaten egg yolks.
Slowly pour the cream-egg mixture through a sieve and into a different bowl.
Allow to settle for 20 minutes or until froth is reduced.
