Zaru Soba
Japanese noodles are tossed with soy sauce, mirin, and sesame seeds in this refreshing Zaru Soba recipe, great served cold on a hot day.
Bring water that has been lightly salted to a boil.
Add the soba noodles, and cook them for 5 to 8 minutes, stirring occasionally.
Drain.
Use cold water to rinse to hasten the cooling process.
In a small saucepan, combine white sugar, dashi, soy sauce, and mirin.
Bring to a boil.
Remove from heat and let cool for about 25 minutes until room temperature.
Divide the noodles among the 4 serving bowls after tossing with sesame seeds.
Put dashi sauce on top of the noodles.
Add green onions and nori to the top
