The entire family will enjoy this quick and simple weeknight meal of homemade mac and cheese with cauliflower.
Large pot of lightly salted water should be brought to a boil.
Cook elbow macaroni in boiling water for 8 minutes, stirring occasionally, until fork-tender but still firm to the bite.
Fill a saucepan with water until it is just below the bottom of the steamer insert.
Water is brought to a boil.
Add the cauliflower, cover, and steam for 5 to 6 minutes, or until fork-tender.
Blend or process the cauliflower until smooth in a blender or food processor.
Place a sizable saucepan over medium heat after spraying it with nonstick cooking spray.
Add flour and oil; stir continuously for 1 to 2 minutes, or until a thick paste forms.
Add milk; stir frequently for 3 to 4 minutes, or until mixture thickens.
