Fresh Summer Corn Salad
This fresh corn salad is a refreshingly simple side dish that’s perfect for a hot summer night or afternoon picnic.
Large pot of salted water should be brought to a boil.
Add the corn and cook for 3 minutes, or until the starchiness is barely gone.
To stop the cooking process and maintain the color, drain the food and submerge it right away in ice water.
Give it about 10 minutes to cool.
By cutting close to the cobs, remove the kernels.
In a big bowl, combine corn kernels with red onion, vinegar, olive oil, salt, and pepper.
Just before serving, stir in some fresh basil.
Adjust seasonings based on taste.
Serve cold or at room temperature.
