Grilled Asparagus, Red Bell Pepper, and Portobello Mushrooms
Asparagus, red bell pepper, and portobello mushrooms are tossed in a simple vinaigrette and grilled to perfection. Serve as a side dish or a topping for pasta or salad.

For the vinaigrette, combine the olive oil, vinegar, Dijon, sugar, salt, and pepper in a small bowl and whisk to combine.

Add bell pepper, asparagus, and mushrooms to a sizable resealable bag.

Combine everything by tossing it together thoroughly.

Lightly oil the grate and preheat an outdoor grill to medium heat.

Place an aluminium foil-lined vegetable pan on the preheated grill.

Vegetables with vinaigrette should be added to the grill pan.

Grill vegetables for 5 to 7 minutes, or until desired level of softness or crunchiness.
